Potage bonne femme - Saumon - Côtelettes braisées Faisan - Pèches - Café
1. 12 February
Whistler bought mackerel from John S. Charles (fl. 1876-1887), fishmonger in Pimlico, London [more], on 12 February 1878 (#08848). Date confirmed by comparison of writing, butterfly signature with other menus.
The menu, written in French, consisted of 'Potage bonne femme' (literally, 'good housewife's soup', comprising leek, potato and carrot), followed by salmon, braised cutlets, pheasant, peaches and coffee.
